Barbecue Chicken Salad with Creamy Avocado Garlic Dressing

Spicy barbecue chicken is a delightful flavor pairing with cooling, creamy avocado garlic dressing!

 Ahhhhh….darlings, it’s so hot that La Diva has not been cooking hardly anything at all! In sticking with my goal of easy summer salads as main meals, here’s a great recipe for a salad that everyone will love! Spicy barbecue chicken salad with a cool ‘n’ creamy avocado dressing…..mmmmmm…….

Barbecue Chicken Salad with Creamy Avocado Garlic Dressing

Tangy, spicy barbecue chicken and crisp vegetables sit atop a bed of greens and summer vegetables and drizzled with a decadent avocado garlic dressing. Cool, quick and delicious for hot summer nights!

Salad Fixin's

  • 2 chicken breasts (skinless, boneless)
  • 2 tbsp La Diva's barbecue rub
  • 1 tbsp oil
  • 1/4 cup barbecue sauce (your favorite store bought or home made)
  • 1/2 ear corn on cob (cooked and shucked)
  • 1/2 jicama, small (peeled and julienned)
  • 1/2 red pepper (sliced into strips)
  • 1/4 red onion (sliced thin)
  • 1/2 carrot (peeled and shredded)
  • 8 grape tomatoes (sliced in half)
  • 1 celery stalk (sliced thin)
  • 4 cups salad greens (washed)

Creamy Avocado Garlic Dressing

  • 1/4 ripe avocado
  • 2 tbsp milk
  • 1 garlic clove
  • 1 tbsp mayonnaise
  • 1 tbsp plain Greek yogurt
  • 1 tbsp olive oil or safflower oil (Any mild tasting oil is fine)
  • 1 tbsp fresh lime juice
  • salt and pepper to taste

Barbecue Chicken

  1. Heat grill

  2. Rub chicken with spice rub and oil

  3. Prepare salad plates

  4. Add salad greens to two dinner plates

  5. Layer all the vegetables onto the greens except for the tomatoes and corn

  6. Cook chicken and baste with barbecue sauce

  7. Let chicken cool slightly while you make the dressing

  8. Cut chicken into slices

  9. Splay the chicken slices over the salad

Creamy Avocado Garlic Dressing

  1. In a food processor or in a deep jug with an immersion blender, add garlic and chop

  2. Blend until smooth

  3. Add all the other dressing ingredients and blend until smooth

  4. Add salt and pepper to taste

  5. Thin dressing with milk a teaspoon at a time as needed

  6. Dress salad and top with corn and tomatoes

  7. Serve immediately.

Result: Wow! One of La Diva’s fave salads! The bbq chicken is slightly spicy and sweet and works great with the crunchy jicama and celery. The corn adds another texture and enhances the Southern-style flavor profile. The creamy coolness of the dressing is divine! Gotta go, the beach is callin’!!!!

    Our beach isn’t as lively in colors, but I can live vicariously through this post and only hope that my version will conjure up similar colors and tastes. Love the pictures and the recipe. Thanks!

    I love jicama. I would imagine that you’ve been getting quite a bit of use from your pool floats because it’s HOT baby.

    Troll, I think the dressing would be divine for Italian beef cuz the flavor of the avocado is pretty mild but there’s a nice hit of garlic to it! The dressing would certainly cool any spice!

    Sham, I think jicama is totally under-used and under-rated!

    Made the dressing and it was a big hit with Italian Beef sandwiches. Also Italian Sausage sandwiches.

    Used lemon and less garlic but basically the same.
