  1. Cut up chicken into 10 portions, cutting the breasts in half. Leave on skin.
  2. Add chiles, garlic and ginger to a food processor and process until well chopped. Add brown sugar, fish and soy sauces and process until smooth. Add to chicken in a bowl and transfer to a large zip locked bag or marinating tray. Refrigerate for two days, turning over into the marinade frequently.
  3. Pre-heat a convection oven to 350 F. Put a rack over a foil-lined baking tray and spray it with cooking spray. Then spread the chicken out evenly over the rack. Bake in the oven for 20 minutes, then turn the chicken over and continue baking another 20 minutes until all meat is cooked through and the skin is a golden brown.
  4. Serve the chicken with hot, cooked white or brown rice. Top with chopped cilantro and serve.
  5. *HANDY HINT: Keep your whole, unpeeled and washed ginger in the freezer in double storage bags. When you need to use it, grate it frozen using a microplane grater. Your ginger will keep in the freezer for months and always be ready for you when you need it.
